If you live anywhere near the East Coast, chances are, like us, you’re waiting for Sandy to strike. I, for once, hope the media is creating unnecessary hysteria, but I have a feeling this time, that won’t be the case. The sky was awfully gray all day yesterday and the wind is already starting to pick up. There are leaves flying all over the place and you can feel a certain “heaviness” in the air. I think this thing is gonna be bigger than we expect.
They’re saying we could have power outages that may last over a week, so we’re keeping our fingers crossed that doesn’t happen. It’s really unbelievable how much we rely on electricity and how we can barely function without it nowadays. We’ll just have to wait and see what happens I guess.
But… we haven’t lost power yet, so let’s take advantage of it!
As Halloween approaches, we thought it would be the perfect time to share with you this recipe for “Panellets”.
Panellets are traditional nut based cookies that are typically eaten in the Barcelona region, on November 1st (All Saints Day) a national holiday.
Growing up, Halloween didn’t exist in Spain (it does now for what we hear). We didn’t have candy, we didn’t go trick or treating and we didn’t dress up. It was always kind of boring day for us. We were off from school and everything was closed, except for some bakeries that would open only in the morning to sell Panellets.
Sort of like what it looks like it’s going to be around here for the next few days…

- Prep time: 15 minutes
- Cook time: 15 minutes
- Ingredients (yields about 30 cookies)
- 1 1/2 cup almond meal
- 1/3 cup plus 1tbs sugar
- 2 tsp lemon zest (about two lemons)
- 2 eggs, lightly beaten in two separate bowls
- 3/4 cup pine nuts
- Preheat oven to 350F. Line a large baking sheet with parchment paper
- In a large bowl, combine almond meal, sugar, lemon zest and one beaten egg and mix to form a soft dough
- Working with 1 teaspoon of dough at a time, form small balls using your hands
- Dip each cookie in beaten egg
- Coat cookies with pine nuts, gently pressing them into the dough so they stick well
- Arrange cookies on baking sheet, lightly brush them with egg and bake at 350F for 15 minutes or until light golden brown
